LUNCH BOX IDEAS

In today’s post, we will see many ideas together to prepare delicious lunches for office/school/ university! They are all very easy and perfect ideas to prepare the day before or even in the morning when you wake up. I made 5 different ideas that you can make from Monday to Friday and vary as you prefer, in all the recipes you can add to taste slices of bread or even the fruit you prefer! In every lunch I also added a snack like dried fruit, dark chocolate or delicious nachos, will make your lunch break more pleasant and tasty! Let’s see how to prepare them!

For the containers you can, of course, adapt the normal plastic food trays by placing small boxes inside larger boxes or finding other solutions. However those in the images can be found in some shops or supermarkets and can go both in the fridge and in the freezer and in the microwave, they can be washed in the dishwasher and are reusable.

INGREDIENTS

MIXED SALAD LUNCH:

  • fresh salad
  • green olives
  • first salt cheese
  • Cherry tomatoes
  • bread croutons
  • apple
  • cinnamon
  • juice of half a lemon
  • olive oil
  • salt

VEGETABLE MIX LUNCH:

  • sliced pumpkin
  • sliced courgette
  • sliced aubergine
  • bread crumbs
  • olive oil
  • Salt to taste.;
  • Chives q.b.
  • dark chocolate
  • fruit to taste

OMELETS ALL TASTES LUNCH:

  • 2 eggs
  • A pinch of salt
  • 70-80 ml of milk
  • chives
  • vegetables of your choice (peas, cherry tomatoes, carrots)
  • cooked basmati rice
  • mix of dried fruit to taste

FAST SANDWICH LUNCH:

  • wholemeal bread for a sandwich
  • mayonnaise
  • sliced tomato
  • sliced cheese
  • boiled egg
  • mixed salad
  • olive oil
  • salt
  • grape or fruit to taste

LUNCH QUINOA:

  • a pepper
  • a courgette
  • an eggplant
  • 200g of cooked quinoa
  • salt
  • olive oil
  • 200g of cooked chickpeas
  • 60-70ml of water
  • juice of half a lemon
  • Chives q.b.
  • salt a pinch
  • a tablespoon of olive oil
  • Sesame seeds q.b.
  • nachos

PROCEDURE

MIXED SALAD LUNCH:
For the first lunch, I prepared a mixed salad of toasted bread and diced apples with lemon and cinnamon.

First let’s start preparing the salad, wash the fresh salad and add the sliced olives, the primosale, the sliced tomatoes, for the seasoning of oil and salt I use a smaller jar, in this way I can combine it at the time of eating it. Mix the salad well.

We also prepare the diced apple and combine the juice of half a lemon and cinnamon. Let’s combine everything in our container!

VEGETABLE MIX LUNCH:
For the second lunch, I prepared baked vegetables au gratin (also use seasonal vegetables), diced cheese, fruit, and dark chocolate.

First, we cut the pumpkin, courgette, and aubergine into cubes.

We transfer everything to a baking sheet covered with parchment paper and add breadcrumbs, oil, salt, and chives. Cook at 180 ° for about 20 minutes in a convection oven. We combine the vegetables in our container together with the diced cheese, as a snack, we combine a plum and some dark chocolate.

OMELETS ALL TASTES LUNCH:
For the third lunch, I made vegetable omelets, basmati rice, and dried fruit!

In a bowl we mix the eggs, add the salt, oil, milk and mix well. We prepare raw vegetables finely chopped, I used peas, cherry tomatoes, and carrots.

We transfer our dough to the well-oiled muffin pan, with these doses are 6 omelets. We add vegetables to the surface. Let it cook at 180 ° in a convection oven for 20 minutes. We combine everything in our container: omelets, basmati rice, and dried fruit mix!

FAST SANDWICH LUNCH:
For the fourth idea, I made a quick sandwich with mixed salad and fruit!

This lunch is really fast, we just have to stuff the bread with mayonnaise, sliced tomatoes and cheese, hard-boiled eggs and a pinch of salt. Cut it in half and place it in our container, add the salad, the seasoning and the fruit to taste.

LUNCH QUINOA:
For this last idea, I prepared the quinoa with vegetables, the chickpea cream and I accompanied it all with some delicious nachos!

First, we cut the vegetables into cubes and cook them in a pan with oil and salt for about 10 minutes. We combine the cooked quinoa and mix well.

Prepare the chickpea cream: in a blender, we combine the chickpeas, water, lemon, salt, oil, chives, and sesame seeds. We whisk everything and our cream will be ready! We transfer the quinoa with the vegetables into the container, we also add the chickpea cream and the nachos!
